Meal Plan – Sunday – Saturday (4th – 10th Jan)

I don’t think I’ve ever gotten as many views as I have since new year, ever. I hope you’ve been finding my posts helpful!

I’ve done my meal plans based on SP days and I’ve decided that as and when I need if I fancy anything not speed or protein I’ll just change to an EE day (unless it’s a college day as the only healthy thing seems to be jacket potatoes)

Sunday (I got up really late and haven’t felt very hungry so just one meal and a snack) – SP plan
Dinner: soy salmon (p) with broccoli (s), green beans (s) and peas (p)
Snacks: roast carrot chips (s), boiled eggs (p), salt and vinegar hula hoops (6 syns)
Total syns: 6

Monday – SP Plan
Breakfast: wholemeal toast (HEB) with baked beans (p), scrambled eggs (p), mushrooms (s) and spinach (s)
Lunch: chicken (p) salad with Ainsley Harriot Spice Sensation Cous Cous (1.5 syns), cherry tomatoes (s), green beans (s) and broccoli (s)

It’s a bit repetitive this week as I’m eating on my own so I need to make sure leftovers are eaten! As usual, I’ve planned a few syns but no doubt I will add to the list as and when I fancy.

My mason jar filled & ready to go!

 

Trying to make sure I’m drinking enough water. Got this cute mason jar and metal straw over Christmas and I’ve filled it with cucumber and strawberries to give it a bit of flavour. It worked well yesterday so I’m hoping to manage another 2L today and to get over the headache!

Meal Plan – Fri & Sat (2nd & 3rd Jan)

Hi guys,

Just a quick meal plan as it’s only to tide me over until I can do a food shop. As I mentioned in my plan for the new year, I will be mixing up my EE and EESP days. I think I’m going to try and have around 4 EESP and 3 EE days – it just depends how I feel. But, I will be making sure if I have an EESP day, I will be following it 100% and if I fancy some potatoes or something, then I’ll change it to an EE day as it makes more sense to me that way!

Friday – SP day
Breakfast: spinach (s) and mushroom (s) omelet (p) with 15g grated cheddar (half HEA)
Lunch: carrot (s) and coriander soup with 30g philadelphia light (half HEA) and ham (p) on a wholemeal bap (HEB)
Dinner: sirloin steak (p) with fat cut off, swede (s) and carrot (s) mash with brussel sprouts (s)
Snacks: 3 clementines (s), half punnet of strawberries (s) and ham (p) and cucumber (s) on a wholemeal bap (HEB) with 2 tbsp light salad cream (3 syns)

Saturday – SP day
Breakfast: egg (p), bacon (p) and mushroom (s) on a wholemeal bap (HEB) with 2 tbsp ketchup (2 syns)
Lunch: soy salmon (p) with carrot (s) and swede (s) mash and peas (p)
Dinner: soy salmon (p) with broccoli (s), green beans (s) and peas (p)
Snacks: ham (p) and cucumber (s) roll ups, 3 clementines (s) and half punnet of strawberries (s)

I’ll add more syns in depending what I fancy. I’ll be doing a shop on Sunday I think so I will have another food shopping post for you.

It’s about 5pm now and I’ve just received my new mason jar (1L) with a metal straw and hole in the lid. I’ve been drinking non stop strawberry infused water and I have the worst detox headache 😦 I can’t wait to feel less bloated and lethargic. I hope these 2 SP days will mean I can start losing the 4lbs I gained over Christmas!

Food Shopping – Morrisons (13th Dec)

Hi guys,

Just a quick food shop update today. I spent a little more as I got a few things for OH’s Christmas snack box which isn’t on the list but I thought I’d mention it anyway. Total including all the snacks for him was £53.17 but I’ll update you on the total below.

Excuse the table weirdness in the middle – I ended up taking a panorama so I could fit everything in 🙂

Fruit and veg: mini corn on the cob, massive papaya, onions, baby spinach, tender stem broccoli, clementines, strawberries, bananas, baby potatoes, parsley, cucumber, leek, sweet potato, tomatoes, radishes

Everything else: Cathedral city mature selection bag, 2 Cathedral City vintage cheddars (on offer), sliced ham, pickled beetroot, Philadelphia Light with mediterranean tomatoes, cheese stick, jalapeño hummus, onion and garlic dip, low fat thousand island dressing, can of chickpeas, jalapeño coleslaw, value coleslaw, tarragon, bacon.

Total: £54.83 – £1.66 offers = £53.17 – £12.12  = £41.05

I don’t think the total would have been that high if I hadn’t lost it half way through and smelt the bread! Meant I bought a few things which were off plan and totally random! Also stocked up on my favourite Cathedral City vintage cheddar as it was only £2 a block and BBD was March 2015 so it’ll last a couple of months! Mental note for last time – STICK TO THE LIST!

Also picked up my first £5 voucher on the Morrisons Match & More Card – I think I’ve been shopping three times to get it and collected on my fourth shop so will be using that probably just after Christmas (voucher expiry is a year later so plenty of time to use it!) as I plan on using the £15 off a £60 shop at Aldi to get all my Christmas shopping in later this week.

So that’s how the last few days have gone. I seem to have developed a sweet tooth which is unlike me and I’m going to try and get rid of it! Weigh in on Wednesday is going to be a bit of a nightmare I think as my Mum needs me to drive her to Malton in the evening so she’s decided on a girly dinner. As it wasn’t planned, I’m going to make sure that my choices are going to be more SW-friendly. I don’t think I can take any more hits this week. All this Christmas malarkey has worn what was left of my self control extremely thin. Definitely need to get this back!!

Dinner: we headed to Red’s in Leeds with a friend which was hastily rearranged as we were supposed to go next week. I had a few sips of the bourbon bacon milkshake, the starter mixed ribs, the juicy lucifer burger with fries (which my OH had and I had some of his pit beans), frickles (really disappointing so I only had a couple) and slaw. As you can see I left a lot – I had about 3/4 of the burger and half the slaw. Somehow I lost myself and ordered dessert (pecan and salted caramel peach cobbler with ice cream) and it was so sickly sweet I only ate about half (of the cobbler part).

Dinner: soft shell crab with wasabi mayo (the weirdest thing I’ve ever eaten and much of it was left on the plate!) and a beef massaman curry with garlic rice, jasmine tea and a diet coke.

Yeah, so this week has been one hell of a write off. I feel really rubbish for it too. What I’m dreading is that next week we’re out again (for Christmas lunch with my Mum and sisters and to a friend’s work do at Nando’s) which isn’t too bad I suppose but I think I just want to curl up in a ball at home and not eat until next week (which is obviously unsafe and not actually happening!). As I said, Thursday hasn’t been too bad – I haven’t been to college tonight so no rubbish to choose from. Tomorrow I think I’m trying to make Big Mac in a bowl so that will be interesting. I feel I’ve gone majorly off the food plan for this week and my fridge just seems ridiculously full!

Congee Recipe

Hi guys,

I thought that after my food plan of the week, I would post my recipe on congee. It’s not one that has a lot of ingredients or in any way complicated so you can always give it a go 🙂

As I mentioned in a previous post, this dish is popular throughout the Asian continent and is known by many different names. It is essentially, depending on your personal tastes, a thick rice porridge or quite a thin rice soup. I prefer mine a little wetter and I usually pair this with thin beef slices (no visible fat) or with turkey mince stuffed bitter melon and my homemade black bean sauce (another recipe perhaps?). Another popular variant of this is “Eight Treasure Congee” which is full of different beans and grains and known for cooling the body in hot Summer months.

This dish is perfect if you need a bit of a winter warmer or you’ve had some stomach upset and not feeling up to a heavy meal.

Ingredients:

  • a cup of jasmine rice (you could use brown as a healthier alternative or mixed grains such as quinoa, barley, red/green/black beans)
  • around a litre of chicken or veg stock (or 2 oxo cubes and around  a litre of water)
  • 3 tbsp of preserved cabbage. I used a Chinese Tianjin preserved cabbage which can be found at any Chinese supermarket
  • a couple of slices of peeled ginger
  • some spring onions sliced to garnish
  • salt, to taste
  • sliced beef, pork, lamb (optional)
  • (Optional: vegetables, other grains, beans, pulses, tofu, beancurd sticks/sheets, preserved century egg – if you’re feeling brave!)

Method:

  1. First boil some water and mix with your stock cube/jelly (or if you have chicken stock ready made up, add it later)
  2. Put in the cup of rice in a sauce pan, preferably with a lid.
  3. Add the ginger and stock to the rice and put on a high heat, stirring regularly so the rice doesn’t stick to the bottom

4. In a small bowl, put your preserved cabbage in and use some boiling water to rinse the cabbage so it isn’t too salty

5. Add the drained preserved cabbage to the mix (and any other optional ingredients that take a long time to cook such as grains and pulses) and simmer on a gentle heat for around 30 minutes with the lid on.

6. Add more water if necessary and some salt to taste.

7. Add any optional ingredients such as meat slices and tofu and let simmer for a further fifteen minutes (with the lid off if the mix is too liquid for your liking).

8. At this point the rice grains should have broken down and you have a consistency of thick gruel or watery porridge (depending on your preference). If you are using beans/pulses you may need a further 15-30 minutes. Traditionally, this can be cooked on a low heat for a few hours. Stir in the spring onions and allow to warm for a minute or so and your congee is ready.

I’m pretty sure this is free on Slimming World if you are on the extra easy plan as it doesn’t contain any synned ingredients but I’m not 100% sure. I am not synning this dish on my own food plan.

What is congee?
Congee is an Eastern dish which is essentially rice porridge or a rice soup. A cup of rice is boiled over a long period with lots of water or stock which is easy to digest. Different ingredients can be added but I make mine with preserved cabbage and stock with some sliced beef topside. I usually have it whilst I’m ill but I’ve been craving something warm and savoury and think this will do the trick now it’s dipping below 0 degrees.

My shopping today took me to my first £5 voucher which I’ll be collecting on my next shop. I’m really surprised at myself today as I didn’t get much at all. Saying that though, I decided on lugging a basket around and it was full to the brim! One deal that really caught my eye though, was that Morrisons are currently doing 3 packs of veg for £1.50 which includes carrots, onions and sprouts which I thought was a bit of a bargain as they’re around 1kg packs.

Above – bunch of bananas, 6 wholemeal baps (each are 60g – HEB), 2 packs of strawberries, small box of clementines, celery, mushrooms, 2 packs of carrots, tomatoes, sprouts, red onions and green beans.

Gherkin slices, fat free fromage frais, white wine vinegar, garlic granules and light Dairylea slices (2 are a HEA).

Total cost – was originally £19.19 with £1.57 in savings = £17.62

I think I’m thinking more about my meal plans and how many meals they can actually last me for. Also my OH has been on a cooking storm of his own and hasn’t been really eating with me (I think I only shared the beef stew with him last week) and I have a couple of meals planned which don’t really have much in the way of ingredients. Anyhow, my meal plan will be up tomorrow guys.
